Baked Squash Pasta

Ingredients

  • Large summer squash

  • 1 lb of pasta

  • Tomato sauce

  • Mozzarella cheese - shredded

  • Onions - chopped

  • Butter

  • Salt & Pepper to taste

Instructions

  • Cut squash in half long ways and scoop out the seeds

  • Dice squash and brown in a skillet with butter, chopped onions, salt, and pepper

  • Cook pasta to al dente

  • Once all ingredients are cooked, add pasta, squash and onions, and tomato sauce to a baking dish. Top with mozzarella and bake for 30-40min at 375 or until golden brown on top 

  • Let cool for a bit before serving
