Baked Squash Pasta
Ingredients
Large summer squash
1 lb of pasta
Tomato sauce
Mozzarella cheese - shredded
Onions - chopped
Butter
Salt & Pepper to taste
Instructions
Cut squash in half long ways and scoop out the seeds
Dice squash and brown in a skillet with butter, chopped onions, salt, and pepper
Cook pasta to al dente
Once all ingredients are cooked, add pasta, squash and onions, and tomato sauce to a baking dish. Top with mozzarella and bake for 30-40min at 375 or until golden brown on top
Let cool for a bit before serving
