Basil & Kale Pesto

Ingredients

1 cup chopped kale, packed tightly

1 cup basil, packed tightly

1/4 cup extra virgin olive oil

1 tbsp lemon juice, plus 1 tbsp lemon zest

2 cloves garlic

1/3 cup walnuts

1/4 cup finely grated pecorino romano or parmesan

salt & black pepper, to taste

Combine olive oil, lemon juice, garlic, and walnuts into a blender or food processor. Blend until nuts and garlic are roughly chopped. Usually about 15 seconds.

Add kale, basil, and romano/parmesan and blend until combined. Add salt and pepper to taste.

Serve with pasta.

If you don’t use all the pesto, you can freeze it in ice cube trays and have a quick delicious meal next time!
